A quick and delicious soup full of veggies and tasty tortellini with every bite. A comforting bowl that will be done in 35 minutes or less, which makes it a great meal for those busy days.
3 Cheese Tortellini Soup

- 1 onion, diced
- 1 red bell pepper, chopped
- 2 celery, chopped
- 3 carrots, sliced
- 4 garlic cloves, minced
- 6 cups chicken broth or vegetable broth
- 1 package of 3 cheese tortellini
- 1 cup fresh spinach
- 1 tsp red pepper flakes
- 1 tbsp fresh thyme
- 2 tbsp fresh parsley, chopped
- salt and pepper
- 1 tbsp olive oil
In a large sauce pot over medium heat, add oil, onions and garlic. Sauté for 2-3 minutes. Add the bell peppers, celery and carrots, sauté for another 2-3 minutes.
Add the broth to the pot, bring to a boil and then simmer for 10-15 minutes. Add the red pepper flakes, thyme, parsley, and tortellini. Stir soup every so often so the tortellini doesn’t stick together.
Once the tortellini is cooked through, approx. 10-15 minutes. Stir in the spinach, salt and pepper to taste.
