These muffins remind me of what you would buy from a bakery. They are fluffy, soft, and delicious!
Chocolate Chip Muffins
Servings: 12 muffins Time: 30 minutes Source: Adapted from littlesweetbaker
- 2 1/2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted and cooled
- 1 cup granulated sugar + 1 tbsp to sprinkle on top
- 2 large eggs
- 1 cup almond milk
- 2 tbsp vinegar
- 1 tbsp vanilla extract
- 1 1/2 cup chocolate chips
*notes* all ingredients should be at room temperature
Preheat oven to 425°F. Prepare 12 cup muffin tray.
In a large measuring cup add 1 cup of milk, and 2 tbsp vinegar and set aside.
In a large bowl sift the flour, baking powder, baking soda, salt and chocolate chips. Set aside.
In a medium bowl, whisk the melted butter, sugar, eggs, milk mixture and vanilla. Add to the dry ingredients, mix until just combined.
Pour the batter into 12 muffin cups and bake at 425° for 5 minutes. Reduce the oven temperature to 375°F and bake for another 12 minutes or until a toothpick inserted into the center comes out clean.
